  • 2 fresh peaches
  • 2 courgettes
  • 100g spinach
  • 150ml water
  • Juice of half a lemon
How to make
  1. Remove the stones from your peaches.
  2. Place all your ingredients in a food processor and blend until smooth.
  3. Pass the mixture through a fine sieve to remove any remaining lumps.
  4. Pour into a glass and enjoy!

Stress-free Steak with Chimichurri Dip

There's nothing quite like a good steak, and this recipe allows you to enjoy it in a healthy, delicious way. The chimichurri brings fiery South American flair to your dish, while satisfying sweet potato wedges are the perfect accompaniment.

Ingredients
(serves 1)
  • 8oz rump steak
  • 1 sweet potato
  • 2 frozen corn on the cob
  • 80g mixed sesame seeds
  • 40g coriander
  • 30g mint
  • 30g flaked almonds
  • Half a red chilli
  • 1 tbsp coconut oil
  • Rapeseed oil
  • Juice of half a lime
How to make
  1. Pre-heat your oven to 170C.
  2. Place the mint, coriander, chilli, lime, almonds and a splash of rapeseed oil in a food processor.
  3. Blend until you have a thick chimichurri pur.
  4. Smother the steak with around half of the chimichurri.
  5. Add a little more oil and blend until you have a smooth dip. Set this aside for later.
  6. Peel the sweet potato and cut it into wedges.
  7. Place the wedges in a baking tray, cover lightly with rapeseed oil and bake for 15 minutes.
  8. Mix them in a bowl with the coconut oil and sesame seeds and set to one side.
  9. Pre-heat a tablespoon of rapeseed oil in a frying pan and cook your steak according to your preference.
  10. Leave the steak to rest for about three minutes before serving.
  11. Microwave the corn for 90 seconds and add it to the steak pan until lightly browned.
  12. Add the sweet potato to the same pan in order to heat through.
  13. Slice the steak and serve alongside your wedges, corn and chimichurri dip.
